Healthy Chocolate Chip Cookies

You guys!!! I cannot wait for you to try this new cookie recipe! OMG! You’ll be amazed when you make these. These are soft baked cookies with a slight cakey cookie texture. I’m actually amazed that all of the ingredients in these are pretty damn clean! If you know me by now, I’m all about making delicious recipes healthy and nutritious. I hate the term “no guilt” because I never want to feel guilty when I eat (even if it’s something unhealthy).. but these cookies are truly no guilt!

These are gluten free too. I used almond flour instead of regular flour. For the chocolate chips, I chose dark chocolate which is high in antioxidants, promotes heart health, improves brain function, and can improve blood flow. If you prefer no sugar, you can go for 100% cacao or you can use Lily’s Chocolates. I also used collagen for extra protein, gut health, and healthy joints/skin/hair benefits. I love adding collagen to my baked goods since it’s flavorless and doesn’t affect the taste of my treats but gives an added health boost.

I’m amazed with how the texture came out with such clean ingredients. Sometimes I’m in the mood for a freakin’ cookie and I’m so happy that I can have that without having to eat a processed store bought cookie!

Here’s the recipe:

ingredients:

1 egg (organic & pasture raised)

2-3 tbsp maple syrup (depending on your sweet preference)

1/4 cup coconut oil (melted)

1/2 cup almond butter (or any nut/seed butter of your choice)

1 tsp vanilla extract

1 tbsp unsweetened almond milk

1 1/4 cup fine almond flour

1/4 tsp baking soda

1/2 tsp cinnamon

1 cup dark chocolate chips (more or less to your liking)

1/4 tsp sea salt

4 scoops Vital Proteins Collagen Peptides (optional) or sub 1/4 cup additional almond flour

directions:

  1. Preheat oven to 325 degrees F.

  2. Add egg to large mixing bowl and whisk well. Then add maple syrup, coconut oil, almond butter, vanilla extract, and almond milk and mix well.

  3. Add almond flour, baking soda, cinnamon, collagen, and some sea salt to bowl and mix well. Then fold in dark chocolate chips. Save some dark chocolate chips to add on top right before baking.

  4. Line cookie sheet with parchment paper. Then spoon cookie batter into balls (makes about 12 cookies) onto the baking sheet. Place remaining dark chocolate chips on top of the cookies and sprinkle sea salt.

  5. Bake for 12 minutes in oven and then turn the broiler on and cook for an additional 1 min to brown the tops. (Keep an eye on them because they can burn quickly)

  6. ENJOY!!!!
