Instant Pot Pork Roast

First off, let me tell you guys that I’m usually not a huge pork person… but this pork roast… OMG!!! It’s soooo good. The first time I made it, I could not stop eating it!

Second, I want to say that the Instant Pot is like my best friend. It is one of the best inventions ever and quite possibly might be my favorite kitchen gadget! It does so many things so well… like this pork roast recipe!

Third, if you’re striving to make healthier choices, you may want to consider choosing the healthiest highest quality sources of protein… animal protein that is grass-fed/grass-finished, has no hormones or antibiotics, free-range, wild-caught, etc. I am obsessed with Butcher Box which is a meat delivery subscription box that is completely customizable. I rarely eat meat out because I know it’s probably cheap, farm or factory raised, etc. I rather cook my own meat and know that it’s good for me. I probably would’ve never attempted cooking a pork roast if it weren’t for Butcher Box! Also, did you know that the pork butt is not really the butt? It’s actually the pig’s shoulder! I had no idea. So for the pork roast, that is what we’ll be cooking. When ordering, you’ll choose pork butt! I cannot wait for you to try this recipe. It’s definitely on repeat for us at least once a month!!! It melts in your mouth, it’s so tasty, and it’s really easy to make! You can eat it by itself, in a pulled pork sandwich, in tacos, on a plate with a side of veggies, in a noodle dish, over rice… the possibilities are endless.

Ingredients:

Pork Butt (I used a 5.5 lb butt, but any size should work as long as it fits in your instant pot)

3-5 cloves of Garlic (peeled and chopped)

1 onion (chopped in big chunks)

salt and pepper

2 cups of broth (I used TJ’s Beef Bone Broth)

Avocado oil

Directions:

1.) Set Instant Pot to Saute function and wait for it to get hot (it will literally say HOT on the screen when it’s hot and ready.)

2.) Meanwhile season your meat with avocado oil, salt, and pepper. You can add garlic powder too (optional).

3.) When the pot is hot, you will add your meat and sear each side for about 4 minutes.

4.) After all sides are seared, remove meat from instant pot and set it on metal trivet. Then pour the broth into the instant pot and scrape off all the brown bits at the bottom of the pot.

5.) Add the trivet and meat back into the instant pot. Add the garlic and onions as well. Then cover with lid and make sure vent is set to sealing.

6.) Set Instant Pot to Meat/Stew for 30 minutes. When it’s done cooking, allow natural pressure release for 10 minutes and then quick release. (If you prefer it crispy, then pre-heat your oven to 425 degrees F once it’s done cooking for the 30 minutes. This way it will be ready to go into oven after the 10 minute natural release)

7.) Optional - If you prefer crispy, then roast in oven at 425 degrees F for 10 minutes. Enjoy!
