Eggplant Pizza Bites
Hey guys!!!
For those of you watching your carb intake, here’s an easy yummy way to get your pizza fix in. The base is a vegetable so plenty of fiber in this recipe as well.
Aaron came home with a huge eggplant last week and I find it awesome that I was able to use the emoji for what it was intended to be used for! 🍆 I’m such a dork, I know! 😜 This works well with the fat eggplants, not the skinny Asian or Japanese versions. And you can use whatever toppings your heart desire… or whatever is in your fridge. I always just find a way to work with what I got! Cheese, tomatoes, olives, jalapenos, pepperoni, ham, whatever you want!!! So simple and easy and prep was a breeze!
Ingredients:
2 pounds eggplant
2 tablespoons olive oil
1 tsp dried oregano
1 cup pizza sauce
1/2 cup mozzarella cheese
1/2 cup Parmesan cheese
1/4 cup chopped fresh basil, plus more for garnish
salt, pepper, red chili flakes to season
any other toppings you want (pepperoni, olives, tomatoes, jalapenos, etc)
Directions:
Preheat oven to 400 degrees F.
Slice eggplant into 3/4 inch thick slices. Brush both sides with 2 tbsp olive oil and sprinkle with salt and oregano.
Place eggplant on baking sheet and bake for 15-20 minutes until tender but still maintaining shape.
While eggplant roasts, get your sauce and toppings ready.
Top the eggplant with a thin layer of pizza sauce, then add chopped basil, then sprinkle cheese and salt, then layer more toppings as desired. Layer more cheese and basil to liking.
Broil the eggplant until the cheese is melted and lightly browned (about 3-5 minutes). Top with more fresh basil and serve.
