Paleo Protein Scones

Coach K here bringing you another treat that is Paleo, Keto, Grain-Free, and Gluten-Free. This recipe was inspired by one of my favorite food bloggers, Bethany Ugarte. She always comes up with some amazing gut-healthy recipes and I decided to try this one out while adding a little Coach K twist myself.

These scones are protein packed!!! I had one for breakfast and it kept me full for hours. There are no added sugars either! You know how I am about processed sugars! Stay away! LOL Only 5 ingredients in these yummy scones - eggs, cashew butter, vanilla protein powder, collagen peptides, and blueberries! Katara (my almost 2 year old) looooves them and I don’t feel bad one bit about letting her eat these. If you follow my IG stories, you already know how healthy my baby girl eats.

The yummy frosting you see in the photo… that is just melted coconut butter drizzled on top. The only ingredient in coconut butter is raw organic coconut! That’s it!!! The brand I love and use is Artisana Organics and I get it from Thrive Market or Whole Foods. I mixed in a little bit of coconut oil to make it liquidy to make it easy to drizzle over. Leave it to cool and eventually the frosting will harden. This is so easy to make and so delicious. I can’t wait for you to try it for yourself.

Ingredients:

4 eggs

1/2 cup cashew butter

60 grams of Vanilla Protein Powder (For Arbonne protein - use 3 scoops. For Organifi protein - use 1.5-2 scoops. You can also use your own protein powder)

2 scoops of Vital Protein Collagen Peptides (optional)

1 tsp baking soda

1 cup blueberries (you can add more or less to your liking)

Directions:

1.) Preheat oven to 350 degrees F.

2.) Beat 4 eggs in mixing bowl.

3.) Add the baking soda, cashew butter, vanilla protein, and collagen and mix well.

4.) Pour batter into lined pan and then drop desired amount of blueberries. I poured the blueberries on top then pressed them into the batter.

5.) Bake for about 20 minutes.

Frosting ingredients:

About 4 -5 tbsp coconut butter (add more or less to your liking)

about 2 -3 tsp coconut oil

Frosting directions:

1.) Melt coconut butter and coconut oil and mix together.

2.) Pour over the scone and then let cool to harden.
