Double Chocolate Muffins (Gluten Free, Protein-packed)

Coach K is back in the kitchen making some delicious healthy-ish treats for you. This time it’s double chocolatey heaven! I was trying to make mini-muffins but as you can see from the picture, they kind of look like donut holes/balls! LOL Either way, they came out BOMB!!!

This recipe is loaded with fiber and protein too! Extra win! Fiber and protein are two key ingredients that help stabilize blood sugar levels, satiate you, and prevent an insulin spike. Sometimes you just feel like a chocolate something… cookie, muffin, cupcake, donut (but really don’t want to buy something processed)… and this will for sure do the trick! I love baking because I know what goes into everything I make. No processed sugar, no preservatives, and no unhealthy fats/dairy products. You can even make this recipe completely vegan by substituting the egg with a flax egg. I’m not vegan so I used a pasture-raised egg… but if you are vegan, just sub that out for a flax egg and the recipe works perfectly!!!

You can use this recipe to make mini muffins, regular muffins or even donuts if you have a donut baking tray. I cannot wait for you to try this.

Ingredients:

1 1/2 cups oat flour (you can use rolled oats and blend them up first too)

1/2 cup almond flour

1/3 cup cacao powder

1 scoop Organifi Chocolate Protein Powder

1 egg

1/3 cup unsweetened apple sauce

1/4 cup pure maple syrup

1 tsp pure vanilla

3/4 cup almond milk

1/2 tbsp baking powder

1/4 tsp baking soda

1 tsp apple cider vinegar

dark chocolate chips (optional)

Directions:

1.) Preheat oven to 375 degrees F.

2.) If you don’t have oat flour, then just put the rolled oats in a blender and blend until it becomes fine like flour.

3.) Add all dry ingredients (except chocolate chips) to a mixing bowl and mix well.

4.) Add all wet ingredients to another mixing bowl and mix well.

5.) Then combine wet + dry ingredients to create batter.

6.) Add in chocolate chips (optional). I actually skipped this step and it was still amazing. I instead drizzled chocolate sauce on top. Totally a preference thing.

6.) Grease pan. I used Avocodo Oil Spray to evenly coat the pan.

7.) Fill batter onto pan and then bake at 375 degrees F for 8-10 minutes for mini muffins, 12-15 min for regular muffins, and 10-13 minutes for donuts.

8.) For fudgey chocolate sauce - mix together dark chocolate chips with a little bit of coconut oil or coconut butter and heat up until it’s melted. Then drizzle on top or use as frosting.
