These pudding bites are so dreamy delicious and the perfect little after- dinner dessert to help you wind down before bed.  I’m all about high quality ingredients and using food as healthy nourishment!  Pumpkin is low in calories and packed with lots of fiber and nutrients. Almond butter and coconut oil are both great sources of healthy fats and are highly satiating. Chia seeds are a complete protein, high in antioxidants, loaded with gut friendly fiber, and have anti-inflammatory properties. These delicious pumpkin pudding bites are loaded with so many anti-inflammatory, immune-boosting, healthy gut, and sleep promoting ingredients!  I can’t wait for you to try it!

Ingredients:

1 cup canned organic pumpkin puree (not pumpkin pie)

1 cup creamy nut butter (Almond butter or Nuttzo are my faves)

3/4 cup coconut oil

1-2 tbsp chia seeds (optional)

2 scoops Organifi Pumpkin Spice GOLD

organic maple syrup to taste (about 1/4 -1/2 cup)

Directions:

  1. Heat up pumpkin puree, nut butter, and coconut oil in a pan on the stove at low to medium heat until mixed well.

  2. Add in chia seeds and Organifi Pumpkin Spice GOLD and mix well.

  3. Add maple syrup to sweeten to your liking.

  4. Remove from heat and then pour into either silicone molds or a glass dish with parchment paper.

  5. Chill in fridge for about 2 hours.

  6. Cut into cubes or pop them out of the silicone molds.

  7. Enjoy them chilled so that they are not melted.
