Avocado Stuffed Poppers

Hi guys! Coach K is back with a delicious appetizer that’s Paleo and Keto!!!  These are so easy to make yet feel so fancy. You can even prepare these up to two days in advance.  Def, safe this as something you want to make for your guests once quarantine is over! LOL As your guests arrive, all you have to do is pop these in a preheated oven.  Everyone will be so impressed with your tasty little bites!  Enjoy! :)

INGREDIENTS:

9 Jalapeno peppers

9 slices prosciutto, cut lengthwise into 18 (1-inch-wide) strips

Filling:

1 cup mashed avocado

1 tablespoon chopped fresh oregano (optional)

1 tsp fine Himalayan sea salt

1/2 tsp finely chopped garlic or 4 cloves roasted garlic or just garlic powder if you’re lazy lol

DIRECTIONS:

1.  Preheat oven to 400 degrees F.

2.  Cut the stems off the peppers and make a slice down one long side of each pepper.  Remove the membranes and seeds with the tip of a small knife.  If you prefer hotter peppers, leave a little of the membranes and seeds.

3.  In a medium bowl, mix together ingredients for the filling.

4.  Stuff the hollowed-out peppers with the avocado mixture.  Wrap a slice of prosciutto around each stuffed pepper. Makes 18 poppers.

5.)  Place on lined baking sheet and bake for 10 minutes or until the prosciutto is crispy.  Let cool slightly before eating!
