K-Ho Cookie Blondies

Hey there! Coach Kristine is back with another grain-free, OMG to die for, delicious baking recipe for you to try!!! Don’t walk… run to your pantry and whip these babies up!!! And of course there is also no added sugar (except for the dark chocolate chips which are optional… okay, not really optional, who am i kidding? lol).

What I love about this recipe…

  1. It’s so easy. Just throw ingredients into a blender and boom you got batter.

  2. It’s loaded with protein and fiber from the chickpeas. It keeps you full and satiated! :)

  3. And I don’t feel guilty one bit when I eat this. Definitely quarantine friendly in so many ways. ;)

Ingredients:

1/2 cup apple sauce OR very ripe mashed bananas

1/2 cup nut butter

1/8 cup coconut flour

1 can of chickpeas (15 oz, drained and rinsed)

1 egg

1/4 cup unsweetened vanilla almond milk

Dark Chocolate Chips to your liking

(if you prefer a sweeter batch, you can add 1/4 cup maple syrup or coconut sugar or monk fruit, optional)

Directions:

  1. Preheat oven to 350 degrees F.

  2. Add all ingredients (except chocolate chips) to blender.

  3. Stir in chocolate chips then transfer to a lined square baking pan or bread loaf.

  4. Bake at 350 F for 40 minutes.

  5. Allow to cool completely before slicing.
