Peanut Butter Oat Cookies (Vegan, No sugar added, GF)

Hello BAKING FUN TIME! Seems like this is everyone’s new hobby during quarantine. Remember when I made that delicious banana bread the other day??? Well, I thought to myself… “what about making cookies?”

And if you know me, I like to add my own healthy twist. I rarely use flour and I rarely use added sugars! And I love how I truly feel no guilt when I eat the food I make in this house! SCORE!

Here’s a delicious VEGAN, NO ADDED SUGAR, GLUTEN FREE, GRAIN FREE PEANUT BUTTER OAT COOKIE!!! It takes only 3 ingredients and only 15 minutes to make! All the ingredients are good for you and this cookie is loaded with fiber making it a great treat to tie you over and keep you full. It even makes a great quick breakfast or snack go to. I even feed these to my toddler!

Few tips before you start. Use overripe bananas so they come out sweet. If your bananas aren’t ripe enough, you can add a little maple syrup. You can also add extras to change up the profile such as cinnamon, dried blueberries, chocolate chips, pretty much whatever you want! It’s fun to experiment and try new variations LOL. Ingredients:

2 small very ripe bananas

1 cup old fashioned oats

1/4 cup natural peanut butter (creamy or crunchy, your choice)

Directions:

  1. Preheat oven to 350 degrees F. Line with parchment paper or lightly spray with oil.

  2. Mash bananas in bowl.

  3. Add oats and peanut butter and mix thoroughly.

  4. Roll, then flatten 10-12 cookies and place on prepared baking sheet. (If you prefer larger cookies, it will make 5-6).

  5. Bake at 350 for about 12 minutes or until cookies are golden brown.
