Flourless Banana Bread

Not sure what it is about this quarantine but everyone seems to be making banana bread. My social media feed is bombarded with gorgeous photos of banana bread. Not gonna lie, I have felt the FOMO over here. To make it worse - all the stores are out of flour!!!

Good news is that my banana bread recipe requires no flour! And prep time is less than 5 minutes! YAY! It’s so delicious and I can’t wait for you to try it. Enjoy!



Ingredients:

4-5 medium ripe bananas (I used one banana and cut it up as topping… see photo)

3-4 eggs

2 cups rolled oats

1 cup nut butter of choice (you can use almond butter, peanut butter, etc)

1 tsp baking soda

1 tsp apple cider vinegar

Chocolate chips/chunks (optional)

Directions:

  1. Preheat oven to 350 degrees F and line loaf pan with parchment paper or lightly grease with oil.

  2. Combine all ingredients (except chocolate) into blender and blend well.

  3. Stir in chocolate chunks (amount to your liking)

  4. Pour into prepped loaf pan.

  5. Add banana pieces and extra chocolate chunks to top.

  6. Bake at 35o for 30-40 minutes.

  7. Poke toothpick in the center. If it comes out clean, it’s done. If not, then bake a little longer.
