Healthy Avocado Egg Rolls

Hey guys!

Coach K here to satisfy that crispy yummy avocado craving!!! Have you ever had the avocado egg rolls from Cheesecake Factory??? Well that’s where I got the inspiration for this.

Most of the unhealthy parts of that dish comes from the wrapper and the oil so of course I just made a few simple tweaks to make it a guilt-free version. I also added some salmon inside for some extra protein and to make it a more balanced meal but that is totally optional.

I’m obsessed with Siete Foods and all their products. Their tortillas are AMAZING! They are paleo, gluten-free, grain-free, flour-free, etc. That is what you will need for this recipe. I used the almond flour version but their cashew or cassava version would work just fine.

Ingredients:

6 Siete Tortillas

3 Salmon Patties (cooked, I get mine from Costco; brand is Trident)

1-2 avocados (you can even use ready made guacamole)

avocado oil (enough to coat pan and fry these)

Directions:

  1. Cook salmon patties according to instructions on package. (You can also add whatever protein you prefer or just leave this out.)

  2. Cut salmon patties into narrow strips and place down the center line of tortilla.

  3. Mash avocado in bowl. Then add on top of the salmon patty strips.

  4. Carefully roll the tortilla. The mashed avocado should help make it stick nicely. Repeat for the rest of the egg rolls.

  5. Coat frying pan with avocado oil and set to medium heat.

  6. Once oil is hot, add the rolls with the open side down so that part crisps and cooks first. When crispy, roll over and crisp other side. Make sure all sides are crispy before removing from pan.

  7. Let cool and cut diagonally for presentation :)

Dipping Sauce Ingredients:

Vegenaise (2-4 tbsp)

Sriracha (to taste)

Dipping Sauce Directions:

  1. Add vegenaise to bowl.

  2. Add Sriracha and mix well. Taste to see if you need more sriracha. If too spicy, you can add more vegenaise to balance it out.

  3. If you prefer it more liquidy and less creamy, add a little bit of water and mix well again.
