Healthy Brownies (Vegan, Lactation Support)

Hey everyone,

Mama K is here to share with you this DELICIOUS GUILT-FREE VEGAN BROWNIE! It you’re a breastfeeding mama, these brownies provide amazing lactation support as well. It was to the point that I was afraid to eat a brownie because I was producing so much milk! LOL So the second time, I made them I reduced the amount of Brewer’s yeast.

If you’re not lactating, don’t worry!!! These will not make you lactate! The Brewer’s yeast in the recipe is known to help mothers lactate but it is also known to give you a nice energy boost. You can choose to leave it in if you enjoy a boost of energy or just leave out completely.

Also, these brownies are completely VEGAN! No eggs, no butter… say what??? How can a brownie be delicious without those? I’m not sure how but it is very possible. Try this recipe and find out for yourself!!!

This treat is packed with fiber which I love. Fiber is great for healthy digestion, a healthy gut flora, and helps you stay full! I also added protein to make it an even more well-balanced treat. Both protein and fiber are key in stabilizing blood sugar levels! I don’t feel guilty one bit having these. In fact, I feel super great about myself whenever I eat them!!! I can’t wait for you to make them. Enjoy!

Ingredients:

2 cups Oat Flour (you can also ground rolled oats in a blender to make your own oat flour)

3/4 cups cocoa powder

2 tbsp chia seeds

2 tbsp ground flax seeds

3/4 cup - 1 1/2 cup coconut sugar (depending on how sweet you prefer)

1 tsp baking soda

1 tsp baking powder

2-4 tbsp Brewer’s yeast (optional and depending on how much lactation support you prefer)

1-2 scoops Organifi Chocolate protein powder (optional)

1 1/4 cups water

Dark Chocolate Chips (Enjoy Life brand is vegan and paleo, add to your liking)

Directions:

  1. Preheat oven to 350 degrees F.

  2. Add chia seeds to 1 1/4 cup water, stir well, then set aside. (Stir long enough so there are no clumps. The seeds will start to form gel around them).

  3. Add dry ingredients into a mixing bowl and mix well. (I used 3/4 cup coconut sugar although the original recipe asked for 1 1/2 cups brown sugar. I knew I was adding dark choc chips and did half the sugar and came out great)

  4. Then add chia water to the dry ingredients and mix well.

  5. Add dark chocolate chips and mix well.

  6. Transfer to lined baking pan. (I like to sprinkle a few more chocolate chips on top for presentation).

  7. Bake at 350 degrees F for 8 min.

  8. Let cool before eating.
